Ingredients
- Ripe Bananas: 3 medium, mashed
- Whole Wheat Flour: 1 cup (120 g)
- Oats: 1/2 cup (45 g), rolled or quick oats
- Honey: 1/3 cup (100 g)
- Dark Chocolate Chips: 1/2 cup (90 g)
- Eggs: 2 large
- Baking Powder: 1 teaspoon (5 g)
- Vanilla Extract: 1 teaspoon (5 ml)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the muffin tin by lining it with paper liners or greasing it.
- Mash the ripe bananas until smooth.
- In a large mixing bowl, combine the mashed bananas, eggs, honey, and vanilla extract.
- In another bowl, whisk together the whole wheat flour, oats, and baking powder.
- Fold the dry ingredients into the wet mixture.
- Gently fold in the dark chocolate chips.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use overripe bananas for the best flavor.
- Store leftovers in an airtight container for up to three days at room temperature.
- Freeze muffins for longer storage.
