Ingredients

  • Ripe Bananas: 3 medium, mashed
  • Whole Wheat Flour: 1 cup (120 g)
  • Oats: 1/2 cup (45 g), rolled or quick oats
  • Honey: 1/3 cup (100 g)
  • Dark Chocolate Chips: 1/2 cup (90 g)
  • Eggs: 2 large
  • Baking Powder: 1 teaspoon (5 g)
  • Vanilla Extract: 1 teaspoon (5 ml)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin by lining it with paper liners or greasing it.
  3. Mash the ripe bananas until smooth.
  4. In a large mixing bowl, combine the mashed bananas, eggs, honey, and vanilla extract.
  5. In another bowl, whisk together the whole wheat flour, oats, and baking powder.
  6. Fold the dry ingredients into the wet mixture.
  7. Gently fold in the dark chocolate chips.
  8. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
