- 2 lbs chicken thighs, bone-in and skin-on
- 1 tbsp olive oil
- 1 onion, diced
- 3 carrots, chopped
- 3 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 potatoes, cubed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken with salt and pepper, then brown on both sides. Remove and set aside.
- Add onion, carrots, and celery to the pot. Sauté until softened.
- Stir in garlic and cook for 1 minute.
- Return chicken to the pot. Add broth, potatoes, thyme, rosemary, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until chicken is cooked through.
- Remove bay leaf, shred chicken if desired, and adjust seasoning.
Notes
- For extra flavor, use bone-in chicken thighs.
- Add more broth if you prefer a thinner stew.
- Store leftovers in the fridge for up to 3 days.
