Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 potatoes, cubed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt and pepper, then brown on both sides. Remove and set aside.
  3. Add onion, carrots, and celery to the pot. Sauté until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Return chicken to the pot. Add broth, potatoes, thyme, rosemary, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes until chicken is cooked through.
  7. Remove bay leaf, shred chicken if desired, and adjust seasoning.

Notes

  • For extra flavor, use bone-in chicken thighs.
  • Add more broth if you prefer a thinner stew.
  • Store leftovers in the fridge for up to 3 days.
