Description
A hearty Italian vegetable soup with beans and pasta.
Ingredients

- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, drained
- 4 cups vegetable broth
- 1 cup small pasta
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add diced tomatoes, kidney beans, vegetable broth, basil, and oregano. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add pasta and cook for 10 minutes or until tender.
- Stir in spinach and cook for 2 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- You can use any small pasta shape.
- Add more broth if you prefer a thinner soup.
- Store leftovers in the fridge for up to 3 days.
