Description

A hearty Italian vegetable soup with beans and pasta.


Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained
  • 4 cups vegetable broth
  • 1 cup small pasta
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Add diced tomatoes, kidney beans, vegetable broth, basil, and oregano. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add pasta and cook for 10 minutes or until tender.
  7. Stir in spinach and cook for 2 minutes.
  8. Season with salt and pepper.
  9. Serve hot.

Notes

  • You can use any small pasta shape.
  • Add more broth if you prefer a thinner soup.
  • Store leftovers in the fridge for up to 3 days.
