Instructions
- Preheat the oven to 350°F (175°C).
- Line a 12-cup muffin tin with cupcake liners.
- Melt the unsalted butter in a large mixing bowl and whisk in the granulated sugar until smooth.
- Sift together the cocoa powder, flour, salt, and baking powder in another bowl.
- Add the eggs and vanilla extract to the butter and sugar mixture and whisk until combined.
- Fold the dry ingredients into the wet ingredients using a rubber spatula until just combined.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18–22 minutes, checking for doneness with a toothpick.
- Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack.
- Prepare the ganache topping by heating the cream and mixing it with chocolate chips and vanilla extract until smooth, then drizzle over the cooled cupcakes.
