Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with cupcake liners.
  3. Melt the unsalted butter in a large mixing bowl and whisk in the granulated sugar until smooth.
  4. Sift together the cocoa powder, flour, salt, and baking powder in another bowl.
  5. Add the eggs and vanilla extract to the butter and sugar mixture and whisk until combined.
  6. Fold the dry ingredients into the wet ingredients using a rubber spatula until just combined.
  7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  8. Bake for 18–22 minutes, checking for doneness with a toothpick.
  9. Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack.
  10. Prepare the ganache topping by heating the cream and mixing it with chocolate chips and vanilla extract until smooth, then drizzle over the cooled cupcakes.
