Description

Herbed Chicken Couscous Bowls with Tzatziki is a delightful blend of flavors and textures that transports you to sun-soaked Mediterranean shores. The tender, herb-marinated chicken pairs beautifully with fluffy couscous, while the cool, creamy tzatziki adds a refreshing twist.

Ingredients

  • 🍗 Chicken breast: 2 large (about 500g)
  • 🥣 Couscous: 1 cup (about 180g)
  • 🛢️ Olive oil: 3 tablespoons
  • 🧄 Garlic: 2 cloves, minced
  • 🍋 Lemon juice: 2 tablespoons (freshly squeezed)
  • 🌿 Fresh parsley: 1/4 cup, chopped
  • 🌿 Fresh dill: 1/4 cup, chopped
  • 🌿 Fresh mint: 1/4 cup, chopped
  • 🥒 Cucumber: 1 medium, diced
  • 🥄 Yogurt: 1 cup (plain Greek yogurt)
  • 🧂 Salt: to taste
  • 🧂 Pepper: to taste
  • 🌊 Water: 1 1/4 cups (for cooking couscous)

Instructions

  1. Marinate the chicken by combining olive oil, minced garlic, lemon juice, chopped herbs, salt, and pepper in a mixing bowl. Coat the chicken and refrigerate for at least 30 minutes.
  2. Cook the couscous by boiling water, adding a pinch of salt and couscous, then covering and letting it sit for 5 minutes before fluffing with a fork.
  3. Prepare the tzatziki by mixing Greek yogurt, diced cucumber, salt, and chopped herbs in a bowl.
  4. Grill the marinated chicken in a skillet with olive oil until golden brown and cooked through, about 6-7 minutes per side.
  5. Assemble the bowls by placing couscous at the base, topping with sliced chicken, and drizzling tzatziki over the top. Garnish with additional cucumber and herbs.

Notes

  • Let the chicken marinate for up to 2 hours for more flavor.
  • Use a meat thermometer to ensure chicken reaches 165°F (75°C).
  • Extra tzatziki can be used as a dip or spread.
  • Feel free to experiment with different herbs and vegetables.
