Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until soft.
  3. Stir in flour to make a roux. Cook for 1-2 minutes.
  4. Slowly pour in chicken broth, stirring constantly.
  5. Add shredded chicken, salt, pepper, and garlic powder. Simmer for 15 minutes.
  6. Stir in heavy cream and heat through. Do not boil.
  7. Serve hot.

Notes

  • Use rotisserie chicken for quicker prep.
  • For a lighter version, replace heavy cream with half-and-half.
