Ingredients

  • 1 lb boneless, skinless chicken fillet, sliced
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp cornstarch (optional, for thickening)
  • 1 tbsp water (if using cornstarch)

Instructions

  1. In a bowl, mix soy sauce, honey, garlic, and ginger. Add chicken and marinate for 10 minutes.
  2. Heat oil in a pan over medium-high heat. Cook chicken until browned, about 5 minutes. Remove from pan.
  3. Add bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes until crisp-tender.
  4. Return chicken to pan. Pour remaining marinade over and stir to combine.
  5. If needed, mix cornstarch with water and add to thicken sauce. Cook 1-2 minutes.
  6. Serve hot over rice or noodles.
