Ingredients

  • Crushed pineapple: 1 cup (240 g), drained

  • Chopped pecans: 1 cup (120 g), plus extra for garnish
  • Cream cheese: 8 oz (225 g), softened
  • Powdered sugar: 4 cups (480 g), sifted
  • Vanilla extract: 2 teaspoons

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, salt, and ground cinnamon.
  3. In another bowl, combine the vegetable oil, eggs, crushed pineapple, and mashed bananas, stirring until well blended.
  4. Gradually add the wet mixture to the dry mixture, stirring gently until just combined, then fold in the chopped pecans.
  5. Divide the batter evenly among the three prepared cake pans and bake for 25-30 minutes, checking with a toothpick for doneness.
  6. While the cakes cool, prepare the cream cheese frosting by beating the softened cream cheese, then gradually adding the sifted powdered sugar and vanilla extract until creamy.
