Instant Pot Chicken Alfredo is a creamy pasta dish made with tender chicken, rich Alfredo sauce, and fettuccine, all cooked in one pot for a quick and easy meal.
Ingredients
- 🍗 Chicken Breasts: 2 large (about 1 lb or 450 g)
- 🍝 Fettuccine Pasta: 12 oz (340 g)
- 🥛 Heavy Cream: 1 cup (240 ml)
- 🧄 Garlic: 4 cloves, minced
- 🧀 Parmesan Cheese: 1 cup, grated
- 🍗 Chicken Broth: 2 cups (480 ml)
- 🧂 Salt: 1 teaspoon (or to taste)
- 🧂 Pepper: 1/2 teaspoon (or to taste)
- 🌿 Parsley: 1/4 cup, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Set the Instant Pot to ‘Sauté’ mode and sauté the minced garlic for about a minute until fragrant.
- Add the chicken broth, scraping the bottom to deglaze, then break the fettuccine in half and press it down into the broth without stirring.
- Close the lid, set the valve to ‘Sealing,’ and cook on ‘Manual’ or ‘Pressure Cook’ for 8 minutes.
- Perform a quick release of the pressure, remove the chicken, and stir in the heavy cream and grated Parmesan cheese until smooth.
- Shred the chicken and return it to the pot, stirring to combine, then serve garnished with chopped parsley.
Notes
- For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative.
- Frozen chicken can be used; just add an extra 2-3 minutes to the cooking time.
- Different pasta shapes can be used, but adjust the cooking time accordingly.
