- 🧂 Salt and pepper – to taste
- 🛢️ Olive oil – 2 tablespoons (for sautéing)
Instructions
- Prepare the ingredients by washing and slicing the bell peppers, chopping the onion, and mincing the garlic.
- Sauté the chicken in the Instant Pot with olive oil, browning for about 4-5 minutes on each side.
- Add the bell peppers, crushed tomatoes, red wine, Italian seasoning, and olives to the pot.
- Close the lid, set the valve to sealing, and pressure cook for 15 minutes.
- Release pressure naturally for 10 minutes, then switch to venting to release any remaining pressure. Serve hot.
