Ingredients
- πΆοΈ Jerk seasoning β 2 tablespoons
- π₯© Steak (sirloin or ribeye) β 1 lb (450 g)
- π€ Shrimp (peeled and deveined) β 1 lb (450 g)
- π Jasmine rice β 1 cup (200 g)
- π₯₯ Coconut milk β 1 cup (240 ml)
- π Pineapple (fresh or canned, diced) β 1 cup (150 g)
- πΆοΈ Bell peppers (red and green, diced) β 1 cup (150 g)
- πΏ Green onions (sliced) β 1/4 cup (about 4-5 stalks)
- π Lime (juiced) β 1 lime
- π§ Salt β to taste
- π’οΈ Olive oil β 2 tablespoons (for cooking)
Instructions
- Marinate the steak with jerk seasoning for at least 30 minutes.
- Rinse jasmine rice under cold water until clear, then combine with coconut milk and salt in a saucepan and bring to a boil.
- Cook the marinated steak in a skillet for 4-5 minutes on each side for medium-rare, then let it rest.
- In the same skillet, cook the shrimp for 2-3 minutes until pink and opaque, adding lime juice and salt.
- Fluff the rice, stir in bell peppers, pineapple, and green onions, then serve with sliced steak and shrimp on top.
Notes
- Marinate steak longer for more flavor.
- Do not overcrowd the skillet when cooking.
- Rinse rice to avoid stickiness.
