Ingredients
Scale
- 4 cups water
- 1/4 cup salt
- 1/4 cup sugar
- 1 tbsp black peppercorns
- 2 garlic cloves, crushed
- 2 bay leaves
Instructions
- Combine all ingredients in a large pot.
- Heat over medium until salt and sugar dissolve.
- Let the brine cool completely.
- Submerge chicken in the brine and refrigerate for 1-12 hours.
- Remove chicken, pat dry, and cook as desired.
Notes
- Use kosher salt for best results.
- Thicker cuts need longer brining.
- Discard brine after use.
