  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground lamb and cook until browned.
  2. Stir in garlic powder, oregano, cumin, smoked paprika, salt, and pepper. Cook for 2 minutes.
  3. In a bowl, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, and salt to make the sauce.
  4. Assemble bowls with rice or quinoa as the base. Top with spiced lamb, tomatoes, red onion, and feta cheese.
  5. Drizzle with creamy cucumber sauce and garnish with fresh parsley.

Notes

  • Drain excess liquid from the grated cucumber to prevent the sauce from becoming watery.
