Ingredients

  • 🍗 Chicken breasts – 4 pieces (about 1.5 lbs or 680 g)
  • 🍝 Orzo pasta – 1 cup (about 200 g)
  • 🍋 Lemon juice – 1/4 cup (freshly squeezed)
  • 🥫 Dijon mustard – 2 tablespoons
  • 🧈 Butter – 4 tablespoons (divided)
  • 🧄 Garlic – 3 cloves (minced)
  • 🍗 Chicken broth – 2 cups (about 480 ml)
  • 🧀 Feta cheese – 1 cup (crumbled)
  • 🥬 Spinach – 2 cups (fresh)
  • 🌿 Parsley – 1/4 cup (chopped, for garnish)
  • 🧂 Salt and pepper – to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Melt 2 tablespoons of butter in a large skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. Add the remaining 2 tablespoons of butter to the skillet, then sauté minced garlic for about a minute.
  5. Add orzo pasta, stirring to coat, then pour in chicken broth and bring to a boil. Reduce heat to simmer, cover, and cook for 10-12 minutes.
  6. In a small bowl, mix lemon juice and Dijon mustard.
  7. Once orzo is cooked, stir in the lemon-Dijon mixture, fresh spinach, and crumbled feta cheese.
  8. Slice the cooked chicken and return it to the skillet, gently combining everything.
  9. Heat through for another 2-3 minutes, then garnish with chopped parsley before serving.
