Ingredients
- Unsalted Butter: 3 tablespoons (1 tablespoon for searing and 2 tablespoons for the sauce)
- Sea Scallops: 1 pound of fresh sea scallops
- Kosher Salt: To taste
- Freshly Ground Black Pepper: To taste
- Garlic: 3 cloves, minced
- Freshly Squeezed Lemon Juice: 3 tablespoons
- Chopped Fresh Parsley: 2 tablespoons
Instructions
- Prepare the scallops by patting them dry with paper towels and seasoning with kosher salt and black pepper.
- Heat a large skillet over medium-high heat and melt 1 tablespoon of unsalted butter.
- Carefully add the scallops to the skillet in a single layer and sear for 2-3 minutes until golden brown, then flip and cook for an additional 1-2 minutes.
- Remove the scallops from the skillet and set aside.
- In the same skillet, add 2 tablespoons of unsalted butter and melt over medium heat, then add minced garlic and sauté for 30 seconds.
- Pour in the freshly squeezed lemon juice and stir to combine, scraping up any browned bits from the bottom of the pan. Let simmer for 1 minute.
- Return the seared scallops to the skillet and gently toss them in the lemon butter sauce to coat.
- Serve the scallops on a plate, drizzled with the lemon butter sauce and garnished with chopped parsley.
