Ingredients

- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 lb chicken fillet, diced
- 6 cups chicken broth
- 1 cup orzo pasta
- 1 lemon, juiced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 minutes.
- Add garlic and chicken. Cook until chicken is no longer pink.
- Pour in chicken broth and bring to a boil.
- Stir in orzo and simmer for 10 minutes or until orzo is tender.
- Add lemon juice, salt, pepper, and thyme. Stir well.
- Garnish with fresh parsley and serve hot.
Notes
- For extra flavor, use homemade chicken broth.
- Add more lemon juice if you prefer a stronger citrus taste.
- Store leftovers in the fridge for up to 3 days.
