Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 lb chicken fillet, diced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1 lemon, juiced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 5 minutes.
  3. Add garlic and chicken. Cook until chicken is no longer pink.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in orzo and simmer for 10 minutes or until orzo is tender.
  6. Add lemon juice, salt, pepper, and thyme. Stir well.
  7. Garnish with fresh parsley and serve hot.

Notes

  • For extra flavor, use homemade chicken broth.
  • Add more lemon juice if you prefer a stronger citrus taste.
