- 1 cup shredded coconut
- 1/2 cup coconut cream
- 2 tbsp lime juice
- 1 tbsp lime zest
- 2 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- Extra shredded coconut for coating
Instructions
- Mix shredded coconut, coconut cream, lime juice, lime zest, honey, and vanilla extract in a bowl.
- Stir until well combined and the mixture holds together.
- Roll into small balls (about 1-inch diameter).
- Coat each truffle in extra shredded coconut.
- Chill in the fridge for at least 30 minutes before serving.
Notes
- Store in an airtight container in the fridge for up to 5 days.
- For a firmer texture, freeze for 15 minutes before coating.
- Adjust sweetness by adding more or less honey.
