Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 lb chicken fillet, cooked and shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup cooked bacon, crumbled
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread potatoes in a greased baking dish and bake for 25 minutes.
  4. Mix shredded chicken with sour cream and half the cheese.
  5. Remove potatoes from oven, top with chicken mixture and remaining cheese.
  6. Bake for another 15 minutes until cheese melts.
  7. Garnish with bacon and green onions before serving.
