Marry Me Sausage Orzo Soup is a comforting and hearty dish that combines Italian sausage, creamy broth, and tender orzo pasta, perfect for chilly evenings.

Ingredients

  • 🌞 3/4 cup drained julienne-cut sun-dried tomatoes packed in oil with herbs, coarsely chopped
  • 🛢️ 1 tablespoon oil from the sun-dried tomato jar
  • 🐖 1 pound mild Italian pork sausage
  • 🧅 1 large yellow onion, finely chopped
  • 🧄 2 large garlic cloves, minced
  • 🍅 3 tablespoons tomato paste
  • 🍗 8 cups chicken broth
  • 🥛 1 cup heavy whipping cream
  • 🌿 1 tablespoon chopped fresh basil, plus more for garnish
  • 🧂 2 teaspoons kosher salt
  • 🌱 1 teaspoon dried Italian seasoning
  • 🌶️ 1/2 teaspoon paprika
  • 🍝 8 ounces uncooked orzo
  • 🥬 3 cups packed fresh baby spinach, coarsely chopped
  • 🧀 1 (8-ounce) package cream cheese, cubed, at room temperature
  • 🧀 1/3 cup freshly grated Parmesan cheese

Instructions

  1. Prepare the ingredients by chopping the sun-dried tomatoes, onion, garlic, and spinach, and set them aside.
  2. In a large pot, heat the oil from the sun-dried tomato jar and cook the sausage until browned, then set aside.
  3. Sauté the chopped onion in the same pot until translucent, then add minced garlic and cook until fragrant.
  4. Stir in the tomato paste and cook for about a minute to enhance the flavor.
  5. Add chicken broth, sun-dried tomatoes, salt, Italian seasoning, and paprika, and bring to a boil.
  6. Add uncooked orzo, reduce heat, and simmer for 8-10 minutes until tender.
  7. Stir in heavy cream, cream cheese, and fresh basil until well combined.
  8. Fold in chopped spinach and cooked sausage, cooking for an additional 2-3 minutes until spinach is wilted.
  9. Ladle the soup into bowls and garnish with Parmesan cheese and basil before serving.

Notes

  • Choose high-quality sausage for the best flavor.
  • Use fresh vegetables and herbs for enhanced taste.
  • Adjust creaminess by reducing heavy cream or using half-and-half.
  • Store leftovers in an airtight container in the fridge for up to three days.
