  • 1/2 cup of chopped sun-dried tomatoes
  • 1/2 cup of chicken broth
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Start by boiling a large pot of salted water. Once it reaches a rolling boil, add your linguine or chosen pasta. Cook according to the package instructions until it’s al dente, about 8-10 minutes. Drain the pasta, saving a little pasta water.
  2. Heat a large skillet over medium heat and add the olive oil. Once hot, add the shrimp, seasoning with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove and set aside.
  3. In the same skillet, add minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant. Add sun-dried tomatoes and chicken broth, simmering for 2-3 minutes.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until melted. Adjust thickness with reserved pasta water if needed.
  5. Add the cooked pasta and shrimp back into the skillet, tossing gently to coat with the sauce. Stir in chopped fresh basil and adjust seasoning with salt and pepper.
  6. Plate the pasta and shrimp, garnishing with additional fresh basil and Parmesan cheese. Serve immediately.
