Ingredients

- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tsp paprika
- 1/4 tsp black pepper
- Salt to taste
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large bowl, combine shredded chicken, celery, and red onion.
- In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, paprika, black pepper, and salt.
- Pour the dressing over the chicken mixture and toss gently to coat.
- Stir in fresh cilantro before serving.
- Serve chilled with bread or over greens.
Notes
- For extra zest, add a pinch of cayenne pepper.
- Use Greek yogurt instead of mayonnaise for a lighter version.
- Best served fresh but can be refrigerated for up to 2 days.
