Ingredients
- 🍗 Chicken breast – 500 grams, cut into 1-inch cubes
- 🛢️ Olive oil – 3 tablespoons
- 🍋 Lemon juice – 2 tablespoons (freshly squeezed)
- 🧄 Garlic – 3 cloves, minced
- 🌿 Oregano – 1 teaspoon (dried)
- 🧂 Salt – 1 teaspoon (to taste)
- 🧂 Pepper – 1/2 teaspoon (to taste)
- 🥒 Cucumber – 1 medium, diced
- 🥄 Yogurt – 200 grams (plain Greek yogurt)
- 🌱 Dill – 2 tablespoons, chopped (fresh or dried)
Instructions
- Marinate the chicken by combining olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large mixing bowl. Add chicken cubes and coat well. Cover and refrigerate for at least 30 minutes.
- Prepare the cucumber sauce by mixing diced cucumber, plain Greek yogurt, chopped dill, and a pinch of salt in a separate bowl. Stir until well combined and refrigerate.
- Assemble the skewers by threading marinated chicken cubes onto soaked skewers, alternating with bell peppers and red onions.
- Preheat the grill to medium-high heat. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken reaches an internal temperature of 75°C (165°F).
- Serve the skewers on a platter with the cucumber sauce on the side.
