Ingredients

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh mint (chopped)
  • 1/4 cup feta cheese (crumbled)

Instructions

  1. Place couscous in a large bowl. Pour boiling water over it, cover, and let sit for 5 minutes.
  2. Fluff couscous with a fork and let it cool to room temperature.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and black pepper.
  4. Add cucumber, cherry tomatoes, red onion, parsley, and mint to the couscous.
  5. Pour dressing over the salad and toss gently to combine.
  6. Sprinkle feta cheese on top before serving.

Notes

  • Use whole wheat couscous for extra fiber.
  • Adjust lemon juice and salt to taste.
