- 1 cup couscous
- 1 1/4 cups boiling water
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 clove garlic (minced)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cucumber (diced)
- 1 cup cherry tomatoes (halved)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup fresh mint (chopped)
- 1/4 cup feta cheese (crumbled)
Instructions
- Place couscous in a large bowl. Pour boiling water over it, cover, and let sit for 5 minutes.
- Fluff couscous with a fork and let it cool to room temperature.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and black pepper.
- Add cucumber, cherry tomatoes, red onion, parsley, and mint to the couscous.
- Pour dressing over the salad and toss gently to combine.
- Sprinkle feta cheese on top before serving.
Notes
- Use whole wheat couscous for extra fiber.
- Adjust lemon juice and salt to taste.
- Add olives or chickpeas for extra flavor.
- Store leftovers in the fridge for up to 2 days.
