Description

A fresh and healthy Mediterranean quinoa salad with a tangy lemon vinaigrette. Perfect for a light lunch or side dish.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook quinoa in water according to package instructions. Let it cool.
  2. In a large bowl, combine cooked quinoa, cucumber, cherry tomatoes, red onion, olives, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Sprinkle feta cheese on top before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Add grilled chicken or chickpeas for extra protein.
  • Adjust lemon juice and salt to taste.
