Ingredients
- Gluten-free flour: 1 ½ cups (almond or oat flour recommended)
- Apples: 2 medium, peeled and diced
- Almond milk: ½ cup (unsweetened)
- Maple syrup: ⅓ cup
- Baking powder: 1 teaspoon
- Cinnamon: 1 teaspoon (plus extra for dusting)
- Nutmeg: ¼ teaspoon
- Coconut oil: ¼ cup, melted
- Vanilla extract: 1 teaspoon
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine gluten-free flour, baking powder, cinnamon, and nutmeg.
- In another bowl, mix almond milk, melted coconut oil, maple syrup, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until combined.
- Fold in the diced apples.
- Fill the muffin tins about ¾ full with the batter and sprinkle with cinnamon.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
