A modern twist on the classic Steak Diane, featuring tender beef tenderloin in a rich, creamy sauce with garlic, shallots, and a splash of cognac.
Ingredients
- 🐄 Beef Tenderloin: 2 steaks (about 6-8 oz each)
- 🥫 Dijon Mustard: 2 tablespoons
- 🥫 Worcestershire Sauce: 1 tablespoon
- 🧅 Shallots: 2, finely chopped
- 🧄 Garlic: 2 cloves, minced
- 🥛 Heavy Cream: 1/2 cup
- 🥃 Cognac: 1/4 cup
- 🌿 Fresh Parsley: 2 tablespoons, finely chopped
- 🧂 Salt: to taste
- 🧂 Pepper: to taste
- 🛢️ Olive Oil: 2 tablespoons (for cooking)
Instructions
- Take the beef tenderloin steaks out of the refrigerator 30 minutes before cooking and season with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat and sauté chopped shallots and minced garlic for 2-3 minutes.
- Add cognac to deglaze the skillet, then stir in Dijon mustard and Worcestershire sauce.
- Pour in heavy cream and let the mixture simmer until thickened.
- Cook the seasoned steaks in the skillet for 3-4 minutes on each side for medium-rare.
- Remove the steaks and let them rest, then return them to the skillet and spoon the sauce over them.
- Plate the steaks, drizzle with more sauce, and garnish with chopped parsley before serving.
Notes
- For a gluten-free version, use gluten-free Worcestershire sauce.
- Experiment with additional flavors in the sauce, such as fresh herbs or a splash of beef broth.
