- 2 tsp ground ginger
- 1 tsp baking soda
- 3/4 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1/4 cup coarse sugar (for rolling)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, ginger, baking soda, cinnamon, cloves, and salt in a bowl.
- Cream butter and sugar until light and fluffy. Beat in the egg and molasses.
- Gradually mix in the dry ingredients until combined.
- Shape dough into 1-inch balls and roll in coarse sugar.
- Place cookies 2 inches apart on baking sheets and bake for 10-12 minutes.
- Let cool on sheets for 2 minutes before transferring to a wire rack.
Notes
- Use fresh spices for the best flavor.
- For softer cookies, bake closer to 10 minutes.
- Dough can be chilled for 30 minutes if too sticky.
