Description

Ingredients

  • 8 oz pasta (fusilli or fettuccine)
  • 2 cups mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 cup vegetable broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil and butter in a large pan over medium heat.
  3. Add onions and sauté until translucent.
  4. Add garlic and mushrooms. Cook until mushrooms are browned.
  5. Pour in vegetable broth and bring to a simmer.
  6. Stir in sour cream, Dijon mustard, and paprika. Mix well.
  7. Add cooked pasta to the pan and toss to coat evenly.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.
