Ingredients

  • All-purpose flour: 4 cups
  • Cayenne pepper: 1 tablespoon (for the breading) and 2 to 6 tablespoons (for the spicy paste)
  • Paprika: 1 tablespoon (for the breading) and 1 teaspoon (for the spicy paste)
  • Kosher salt: 1 tablespoon (for the breading) and 1 1/2 teaspoons (for the spicy paste)
  • Black pepper: 1 tablespoon (for the breading) and 1 teaspoon (for the spicy paste)
  • Buttermilk: 2 cups
  • Hot sauce: 1/4 cup
  • Large eggs: 2
  • Boneless skinless chicken thighs: 10 pieces
  • Oil for frying: enough for deep frying
  • Used frying oil: 1/2 cup (for the spicy paste)
  • Butter: 1/4 cup
  • Chili powder blend: 1 teaspoon
  • Garlic powder: 1 teaspoon
  • Onion powder: 1 teaspoon
  • Burger buns: 10
  • Dill pickle slices: for serving

Instructions

  1. Marinate the chicken in a mixture of buttermilk and hot sauce for at least 2 hours or overnight.
  2. Prepare the breading mixture by combining flour, cayenne pepper, paprika, kosher salt, and black pepper.
  3. Dredge the marinated chicken in the breading mixture, ensuring a good coating.
  4. Heat oil in a pot or deep fryer to 350°F (175°C).
  5. Fry the chicken in batches for 8-10 minutes until golden brown and cooked through.
  6. Make the spicy paste by combining used frying oil, butter, cayenne pepper, brown sugar, chili powder blend, garlic powder, onion powder, paprika, kosher salt, and black pepper in a saucepan.
  7. Brush the fried chicken with the spicy paste while still hot.
  8. Assemble the sandwiches by placing the chicken on the bottom half of the toasted buns and adding dill pickle slices.
  9. Serve immediately with your favorite sides.

Notes

  • For extra crunch, consider double-dipping the chicken.
  • Monitor the oil temperature closely while frying.
  • Let the chicken rest after frying to keep it moist.
  • Customize the spice level by adjusting the cayenne pepper.
  • Use fresh ingredients for the best flavor.
