Ingredients
- 🌰 Finely chopped pecans: 1 cup
- 🍇 Pitted dates: 1 cup (about 10-12 dates)
- 🍁 Maple syrup: 2 tablespoons
- 🌿 Vanilla extract: 1 teaspoon
- 🧂 Sea salt: 1/4 teaspoon
- 🍫 Chocolate chips: 1/2 cup (for coating)
Instructions
- Gather your ingredients and tools.
- Soak the dates in warm water for about 10 minutes if they are firm, then drain and pat dry.
- In a food processor, combine the finely chopped pecans, soaked dates, maple syrup, vanilla extract, and sea salt. Blend until well combined but still textured.
- Roll the mixture into balls about 1 inch in diameter and place them on a parchment-lined baking sheet.
- Chill the balls in the refrigerator for at least 30 minutes.
- If desired, melt the chocolate chips in a microwave-safe bowl and dip each ball into the chocolate, then return to the parchment-lined sheet to chill again.
