Ingredients

  • 🌰 Finely chopped pecans: 1 cup
  • 🍇 Pitted dates: 1 cup (about 10-12 dates)
  • 🍁 Maple syrup: 2 tablespoons
  • 🌿 Vanilla extract: 1 teaspoon
  • 🧂 Sea salt: 1/4 teaspoon
  • 🍫 Chocolate chips: 1/2 cup (for coating)

Instructions

  1. Gather your ingredients and tools.
  2. Soak the dates in warm water for about 10 minutes if they are firm, then drain and pat dry.
  3. In a food processor, combine the finely chopped pecans, soaked dates, maple syrup, vanilla extract, and sea salt. Blend until well combined but still textured.
  4. Roll the mixture into balls about 1 inch in diameter and place them on a parchment-lined baking sheet.
  5. Chill the balls in the refrigerator for at least 30 minutes.
  6. If desired, melt the chocolate chips in a microwave-safe bowl and dip each ball into the chocolate, then return to the parchment-lined sheet to chill again.
