A simple and delicious Chicken Teriyaki recipe inspired by Nobu Matsuhisa. Perfect for a quick weeknight dinner.

- 4 boneless, skinless chicken thighs
- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 tbsp sake
- 2 tbsp sugar
- 1 tbsp vegetable oil
- 1 tsp grated ginger
- 1 garlic clove, minced
Instructions
- Combine soy sauce, mirin, sake, sugar, ginger, and garlic in a bowl.
- Marinate chicken in the mixture for 30 minutes.
- Heat oil in a pan over medium heat.
- Cook chicken for 5 minutes on each side.
- Pour remaining marinade into the pan and simmer until thickened.
- Slice chicken and serve with sauce.
Notes
- Use fresh ginger for best flavor.
- Adjust sugar to taste.
- Serve with steamed rice.
