A vibrant and fresh Olive Garden Salad that brings a taste of Italy to your table, featuring a colorful mix of vegetables and a zesty dressing.


Ingredients

  • Chopped Lettuce: 4 cups
  • Shredded Red Cabbage: 1 cup
  • Julienne Carrots: 1 cup
  • Red Onion: 1/2 cup, thinly sliced
  • Black Olives: 1/2 cup, pitted and sliced
  • Roma Tomatoes: 2, sliced
  • Pepperoncinis: 1/4 cup
  • Extra Virgin Olive Oil: 1/2 cup
  • Zesty Italian Dressing Mix: 1 packet
  • White Vinegar: 1/4 cup
  • Water: 1/4 cup
  • Grated Romano Cheese: 1/4 cup
  • Sugar: 1 tablespoon
  • Mayo: 1/4 cup
  • Dijon Mustard: 1 tablespoon
  • Italian Seasoning: 1 teaspoon
  • Salt and Pepper: to taste
  • Garlic Powder: 1/2 teaspoon
  • Croutons: 1 cup
  • Grated Parmesan Cheese: 1/4 cup

Instructions

  1. Wash the chopped lettuce thoroughly and place it in a large salad bowl.
  2. Add the shredded red cabbage and julienne carrots to the bowl.
  3. Thinly slice the red onion and toss it into the bowl with the other vegetables.
  4. Layer the black olives over the salad mixture.
  5. Slice the roma tomatoes and arrange them on top of the salad.
  6. Sprinkle the pepperoncinis across the salad.
  7. In a separate bowl, combine the extra virgin olive oil, Zesty Italian dressing mix, and white vinegar.
  8. Add water to thin the mixture and whisk in the grated Romano cheese, sugar, mayo, Dijon mustard, Italian seasoning, salt, pepper, and garlic powder until smooth.
  9. Pour the dressing over the salad just before serving and gently toss with salad tongs.
  10. Sprinkle croutons and grated Parmesan cheese over the top before serving.
  11. Serve in a large bowl or individual serving bowls.
