Description

One-Pan Creamy Parmesan Chicken & Rice is a comforting dish that combines tender chicken, creamy rice, and fresh spinach, all cooked together in one pan for a simple yet satisfying meal.


Ingredients

  • Chicken Breasts: 4 pieces (about 1.5 lbs or 680 g)
  • Arborio Rice: 1 cup (200 g)
  • Chicken Broth: 4 cups (960 ml)
  • Heavy Cream: 1 cup (240 ml)
  • Garlic: 4 cloves, minced
  • Parmesan Cheese: 1 cup, grated
  • Fresh Spinach: 2 cups
  • Onion: 1 medium, diced
  • Olive Oil: 2 tablespoons
  • Salt and Pepper: to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes on each side until golden brown.
  3. Remove the chicken and set aside. In the same pan, sauté diced onion and minced garlic for 2-3 minutes until translucent.
  4. Add arborio rice to the pan and cook for 1-2 minutes.
  5. Pour in the chicken broth and bring to a gentle simmer.
  6. Add heavy cream and cook for about 5 minutes.
  7. Return the seared chicken to the pan, cover, and reduce heat to low. Cook for an additional 15-20 minutes.
  8. Add fresh spinach in the last few minutes of cooking until wilted.
  9. Stir in grated Parmesan cheese until melted.
  10. Serve with a piece of chicken and creamy rice on each plate.
