Ingredients
- Chicken Breasts: 4 pieces (about 1.5 lbs or 680 g)
- Arborio Rice: 1 cup (200 g)
- Chicken Broth: 4 cups (960 ml)
- Heavy Cream: 1 cup (240 ml)
- Garlic: 4 cloves, minced
- Parmesan Cheese: 1 cup, grated
- Fresh Spinach: 2 cups
- Onion: 1 medium, diced
- Olive Oil: 2 tablespoons
- Salt and Pepper: to taste
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes on each side until golden brown.
- Remove the chicken and set aside. In the same pan, sauté diced onion and minced garlic for 2-3 minutes until translucent.
- Add arborio rice to the pan and cook for 1-2 minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Add heavy cream and cook for about 5 minutes.
- Return the seared chicken to the pan, cover, and reduce heat to low. Cook for an additional 15-20 minutes.
- Add fresh spinach in the last few minutes of cooking until wilted.
- Stir in grated Parmesan cheese until melted.
- Serve with a piece of chicken and creamy rice on each plate.
