- 2 boneless, skinless chicken fillets, diced
- 8 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned.
- Add minced garlic and sauté for 30 seconds.
- Stir in pasta, chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 12-15 minutes until pasta is tender.
- Add spinach and stir until wilted.
- Sprinkle with Parmesan cheese before serving.
