- 2 boneless, skinless chicken fillets
- 1 cup orzo pasta
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add diced onion and cook until translucent.
- Add minced garlic and cook for 30 seconds until fragrant.
- Season chicken fillets with salt, pepper, and oregano.
- Add chicken to the pan and cook for 5-6 minutes per side until golden brown.
- Remove chicken and set aside.
- Add orzo to the pan and toast for 1-2 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 10 minutes until orzo is tender.
- Return chicken to the pan, cover, and cook for 5 more minutes.
- Sprinkle with Parmesan cheese and garnish with fresh parsley before serving.
Notes
- For extra flavor, use bone-in chicken thighs instead of fillets.
- You can add vegetables like spinach or cherry tomatoes for more nutrition.
