Ingredients
- Fresh fish fillets: 4 pieces (about 150-200 grams each)
- Olive oil: 3 tablespoons
- Garlic: 3 cloves, minced
- Lemon: 1, juiced and zested
- Leaf spinach: 200 grams (about 7 oz)
- Salt and pepper: to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Prepare the fish by rinsing the fillets under cold water and patting them dry. Place in a baking dish and drizzle with 2 tablespoons of olive oil, then season with salt, pepper, lemon juice, lemon zest, and minced garlic.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat and add the spinach. Sauté for 3-4 minutes until wilted, seasoning with salt and pepper.
- Place the baking dish with the seasoned fish in the oven and bake for 15-20 minutes.
- Check for doneness; the fish should flake easily with a fork. If not done, return to the oven for a few more minutes.
- Once cooked, serve the fish with the sautéed spinach and your choice of sides.
