Ingredients
- Almond flour – 2 cups
- Coconut flour – 1/2 cup
- Baking powder – 1 tablespoon
- Eggs – 3 large
- Honey – 1/3 cup
- Orange zest – from 1 large orange
- Fresh cranberries – 1 cup, chopped
- Chopped pecans – 1/2 cup
- Vanilla extract – 1 teaspoon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine almond flour, coconut flour, and baking powder.
- In another bowl, whisk together eggs, honey, orange zest, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped cranberries and pecans.
- Fill each muffin cup about 3/4 full with the batter.
- Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
