Ingredients

  • Almond flour – 2 cups
  • Coconut flour – 1/2 cup
  • Baking powder – 1 tablespoon
  • Eggs – 3 large
  • Honey – 1/3 cup
  • Orange zest – from 1 large orange
  • Fresh cranberries – 1 cup, chopped
  • Chopped pecans – 1/2 cup
  • Vanilla extract – 1 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine almond flour, coconut flour, and baking powder.
  3. In another bowl, whisk together eggs, honey, orange zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped cranberries and pecans.
  6. Fill each muffin cup about 3/4 full with the batter.
  7. Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
