Ingredients

  • 12 large sea scallops (about 1 lb)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tbsp chopped fresh parsley

Instructions

  1. Pat scallops dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add scallops and sear for 2-3 minutes per side until golden brown. Remove from pan.
  4. Reduce heat to medium, add butter, garlic, lemon juice, and zest. Cook for 1 minute.
  5. Return scallops to the pan, spoon sauce over them, and garnish with parsley.
