Ingredients

  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour

  • ½ tsp salt
  • 1 cup buttermilk, room temperature

  • ½ tsp almond extract (optional, for added depth)
  • 2 cups chopped fresh or canned peaches (peeled if fresh, drained if canned)
  • 1 tbsp all-purpose flour (for tossing the peaches)

Optional glaze:

  • 1 cup powdered sugar
  • 23 tbsp buttermilk or peach juice
  • ¼ tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C) and grease and flour a 10-inch bundt or tube pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. In another bowl, mix the buttermilk with the vanilla and almond extracts.
  6. Alternately add the dry ingredients and the buttermilk mixture to the batter, starting and ending with the flour.
  7. Toss the chopped peaches with a tablespoon of flour and gently fold them into the batter.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 75 to 85 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 15 minutes before inverting onto a wire rack to cool completely.
