Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten-free flour blend
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dairy-free chocolate chips

Instructions

  1. Preheat oven to 350°F. Line a muffin tin with liners.
  2. In a bowl, mix mashed bananas, peanut butter, maple syrup, eggs, and vanilla.
  3. Add gluten-free flour, baking powder, baking soda, and salt. Stir until combined.
  4. Fold in chocolate chips.
  5. Divide batter into muffin cups.
  6. Bake 18-20 minutes or until a toothpick comes out clean.
  7. Cool before serving.

Notes

  • Use natural peanut butter with no added sugar.
  • For extra sweetness, add 1-2 tbsp more maple syrup.
