- 1 medium ripe banana, mashed
- 1 cup rolled oats
- 2 tbsp honey
- 1 tsp vanilla extract
- 1 cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- Mix peanut butter, mashed banana, oats, honey, and vanilla in a bowl until combined.
- Roll the mixture into small balls (about 1-inch diameter) and place them on a parchment-lined tray.
- Freeze the balls for 30 minutes.
- Melt chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each frozen ball into the melted chocolate, coating evenly.
- Return to the tray and refrigerate until the chocolate hardens (about 15 minutes).
Notes
- Use ripe bananas for natural sweetness.
- Store in an airtight container in the fridge for up to 5 days.
- For a crunchier texture, add chopped nuts to the mixture.
