Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 medium ripe banana, mashed
  • 1 cup rolled oats
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix peanut butter, mashed banana, oats, honey, and vanilla in a bowl until combined.
  2. Roll the mixture into small balls (about 1-inch diameter) and place them on a parchment-lined tray.
  3. Freeze the balls for 30 minutes.
  4. Melt chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Dip each frozen ball into the melted chocolate, coating evenly.
  6. Return to the tray and refrigerate until the chocolate hardens (about 15 minutes).

Notes
