Ingredients
Pecans: 1 cup, finely chopped
Cream Cheese: 8 oz (1 package), softened
Powdered Sugar: 1 cup
Vanilla Extract: 1 teaspoon
Chocolate Coating: 12 oz (dark or milk chocolate, chopped or in chips)
Instructions
- Toast the pecans in a dry skillet over medium heat for 5-7 minutes until fragrant and golden brown. Let them cool.
- In a large mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth and creamy.
- Fold in the cooled, toasted pecans into the mixture.
- Scoop out small portions of the mixture (about 1 tablespoon each) and roll them into round balls. Place on a parchment-lined baking sheet and refrigerate for 30 minutes.
- Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each chilled truffle into the melted chocolate using a fork, allowing excess chocolate to drip off, and return to the baking sheet.
- Refrigerate the coated truffles for 15-20 minutes to let the chocolate set.
