Instructions

  1. Take the prime rib out of the refrigerator and let it sit at room temperature for about 1 hour.
  2. Preheat your oven to 450°F (230°C).
  3. In a small bowl, mix together the kosher salt, coarse ground black pepper, and softened butter to create a paste. Rub this mixture all over the prime rib.
  4. Place the seasoned prime rib on a roasting rack in a roasting pan and insert a meat thermometer into the thickest part of the meat. Roast in the preheated oven for 20 minutes.
  5. After 20 minutes, lower the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours.
  6. When the prime rib is about 30 minutes from being done, add the beef broth and water to the bottom of the roasting pan.
  7. Once the prime rib reaches the desired temperature, remove it from the oven and sprinkle the freshly grated Parmigiano Reggiano cheese over the top. Return it to the oven for an additional 5-10 minutes until the cheese is melted and golden.
  8. Let the prime rib rest for at least 20 minutes before carving.
  9. Slice the prime rib into thick pieces, arrange on a warm platter, and drizzle with the pan jus before serving.
