Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened unsalted butter with granulated sugar and light brown sugar until light and fluffy.
  4. Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition.
  5. Stir in the crushed pineapple, whole milk, and pure vanilla extract into the egg mixture.
  6. Gradually add the dry ingredient mixture to the wet mixture, folding gently until just combined.
  7. Divide the batter evenly between the two prepared cake pans and bake for 25-30 minutes.
  8. Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
