Instructions
- Heat the heavy cream in a small saucepan until just simmering.
- Pour the hot cream over the white chocolate chips in a bowl and let sit for 2 minutes.
- Stir until smooth, then mix in vanilla extract, salt, and half the chopped pistachios.
- Refrigerate the mixture for 2 hours or until firm.
- Scoop small portions and roll into balls, then coat with remaining pistachios.
- Chill for another 30 minutes before serving.
