Ingredients

  • 2 cups apple cider
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic (minced)
  • 1 tsp thyme (chopped)
  • 1 tsp rosemary (chopped)
  • 4 medium potatoes (quartered)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, thyme, rosemary, salt, and pepper. Roast for 30 minutes.
  3. Season pork chops with salt and pepper.
  4. Heat butter in a skillet over medium-high heat. Sear pork chops for 3-4 minutes per side.
  5. Remove pork chops and sauté garlic in the same skillet for 30 seconds.
  6. Pour in apple cider and simmer for 5 minutes until slightly reduced.
  7. Return pork chops to the skillet, coat with sauce, and cook for 2 more minutes.
  8. Serve with roasted potatoes.
