Description

Ingredients

  • 1 pork tenderloin (about 1 lb)
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb Brussels sprouts, trimmed and halved

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix balsamic vinegar, honey, garlic, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear pork tenderloin on all sides until browned.
  4. Brush half the balsamic glaze over the pork. Transfer skillet to the oven and roast for 15 minutes.
  5. Toss Brussels sprouts with remaining glaze and add to the skillet. Roast for another 10-15 minutes, until pork reaches 145°F internally and Brussels sprouts are tender.
  6. Let pork rest for 5 minutes before slicing. Serve with roasted Brussels sprouts.

  • Use a meat thermometer to check doneness.
  • For extra crispiness, broil Brussels sprouts for the last 2-3 minutes.
