Description

Ingredients

  • 1 tbsp fresh ginger, grated
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Add pumpkin cubes and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until pumpkin is tender, about 20 minutes.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in coconut milk and season with salt and pepper.
