Ingredients

- 1 medium pumpkin, peeled and cubed
- 1 tbsp fresh ginger, grated
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté until soft.
- Add pumpkin cubes and vegetable broth. Bring to a boil.
- Reduce heat and simmer until pumpkin is tender, about 20 minutes.
- Blend the soup until smooth using an immersion blender.
- Stir in coconut milk and season with salt and pepper.
- Serve hot.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Garnish with pumpkin seeds or a drizzle of coconut milk.
