Ingredients

  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat butter and sugar until creamy. Add pumpkin puree, egg, and vanilla. Mix well.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Drop spoonfuls of dough onto the baking sheet. Bake for 10-12 minutes or until edges are lightly browned.
  6. Cool on a wire rack before serving.
