Instructions
- Heat heavy cream in a saucepan until warm but not boiling.
- Pour warm cream over white chocolate chips and let sit for 2 minutes, then stir until smooth.
- Mix in pumpkin puree, pumpkin spice, vanilla extract, and salt.
- Refrigerate the mixture for 2 hours until firm.
- Scoop small portions and roll into balls.
- Coat each truffle in graham cracker crumbs.
- Chill for another 30 minutes before serving.

- If the mixture is too soft, refrigerate longer before rolling.
